This is an incredible vegetarian cookbook as well as an incredible low-fat cookbook. I have several Moosewood cookbooks that I love but this is now my ultimate favorite. I love the white bean and roasted pepper dip, I make a new batch every week to bring for my lunch with carrots. The pasta and green bean dish with sun dried tomatoes is so easy and delicious. I am going to try all the recipes recommended in the other reviews! The low-fat cooking tips at the beginning of the book are so helpful and having the full nutrient break down for each dish is wonderful too. What a great book. You really don't feel like you are missing anything. I recommend it to all my friends and family.

This cookbook is one I turn to again and again for recipes that my non-vegetarian friends will enjoy when they come to eat in my vegetarian home. My favorite recipe is for farfalle with red lentils, artichokes, and feta -- very filling, very easy, out of the ordinary. The banana bread/cake is wonderful if you don't like your desserts very sweet. The apple crepes are popular at brunches, and who could resist burritos made with sweet potatoes and black beans? Yum. I have made many recipes from this book, without ever a flop. Most of the recipes are fairly easy to make, even if they have many steps. I recommend this cookbook highly, especially for people who are trying to please vegetarians and omnivores simultaneously.

I got this cookbook because:
1) I am vegetarian
2) I follow a low fat diet
3) I love to cook

I have made many, many of the recipes in this book, and they've been a hit almost every time (well, no cookbook is perfect). There are no glossy pictures -- this is a cook's book. There are several indexes of recipes (10% or less in fat, vegan, children's favorites, etc) as well as "menus" in the back -- new year's, thanksgiving, east asian, tex mex, etc.

Some of the recipes are very time consuming to make (there are quite a few 30 minute or less recipes listed in the back, however), and some of the ingredients are not always easy to find. However, this is *not* meant to be a book of "quick and easy recipes." I have broadend my palate by searching out some of the more unusual ingredients.

The recipes DO call for oil (usually 1-2 teaspoons), low fat cheeses, and (in the dessert section) chocolate. Don't think is a no-fat-no-flavor cookbook. They've kept the feeling of self-denial at bay. There is also a section of fish and seafood recipes, for those so inclined. <><
